The best Amaretto Tiramisu recipe by Michela Chiappa

The best Tiramisu recipe with Amaretto ADRIATICO by Michela ChiappaTV Chef on ITVs This Morning and Sunday Times Best Selling Author!

INGREDIENTS

  • 250g mascarpone cheese
  • 2–3 tablespoons cocoa powder
  • 60ml Amaretto (I used @amarettoadriatico)
  • 60ml strong black coffee (espresso - you can get this from a local coffee shop as it can be cold. I made mine with a Moka pot)
  • 1 bag crunchy Amaretti biscuits 
  • 3 medium eggs
  • 3 tablespoons caster sugar


RECIPE

  • Prepare your cream mix - Separate your egg yolks from your egg whites. Beat the egg whites until they form stiff peaks. Set aside. Beat the egg yolks & sugar until it goes creamy, light and fluffy. Add the mascarpone to the egg-yolk, then gently fold in the egg whites.
  • Layer up - start with cream mix, sprinkle a little cocoa powder over the top using a fine sieve. Quickly dip the biscuits, first in the Amaretto and then in the coffee. Don’t let them absorb too much liquid, as they can get rather soggy. Place biscuits on top of the cocoa powder.
  • REPEAT this process, layering the creamy mixture, cocoa powder and biscuits, finishing with a layer of the creamy mixture. Each creamy layer should just cover the biscuits; don’t spread it too thickly. You ideally want 4 or 5 layers. Lightly dust with more cocoa powder
  • Chill in the fridge for at least 1 hour, and preferably overnight
